RECIPE BOX | PEACH PUFF PANCAKES

both luke and i grew up with puff pancakes, and both of us would agree that they were one of our favorite recipes growing up. however, when we discovered that what each of us thought of as "puff pancakes" was different, it was like world war three. let's just say that on luke's birthday i had to call his mom to get her recipe. he wasn't having mine. i think it's kind of cute. he's a momma's boy.

i have definitely come to love this new (to me) recipe, and have been experimenting with several different fruits and bakeware shapes, adjusting the recipe for each to make it perfect. this time around it was a little less "puff" and basically just an oven pancake, but that is because the peaches i used made it rather moist. regardless of the final look, it tasted delicious. don't worry dad this doesn't mean i've lost love for my childhood puff pancakes!

here's my slight alteration to luke's childhood puff pancake recipe:

ingredients:
4 eggs
1 cup milk
3/4 cup flour
2 tbsp. sugar
1 tsp. vanilla
1/2 tsp. salt
2-3 tbsp. brown sugar
1/2 cup butter
2-3 thinly sliced peaches (or any other fruit --- apples and raspberries are delicious!)

turn oven on to 400 degrees, and melt butter in pan while preheating. once butter is melted, line bottom of pan with peaches (thinly sliced as shown). place pan back in oven until butter starts to become golden brown and bubbly.

whisk together eggs, milk, flour, sugar, vanilla, and salt in large mixing bowl.

take pan with peaches and butter in it out of oven and pour liquid mixture over the top. some of the peaches/fruit will float or move around. this is completely fine. sprinkle with brown sugar. i may or may not go a little overboard with this step.

bake for 20-30 minutes until done. voila! depending on the fruit or pan that you use, your pancakes may "puff" up more than mine did. either way it's delish! cut yourself a huge piece and drizzle with maple syrup.
